Recipe: Halibut in Albariño Seawater Summary : This recipe was shared by a fellow wine and food lover, Nancy Gillespie. Ingredients 1 Pound Fresh Halibut (cut into 1 inch cubes) 3 Shallots (sliced) 2 Garlic Cloves (sliced thin) 2 Calabrian Chiles (sliced thin)-can substitute other hot chile of your choice ½ Fennel Bulb (sliced thin) 3 Tbsp tomato paste 1 cup Albariño 1 tsp ground cumin 1 tsp ground coriander ½ cup seawater (or salted tap water) ¼ cup chopped parsley 1 Tbsp chopped oregano ¼ cup Extra Virgin Olive Oil Instructions Heat Olive Oil in skillet. Add shallots, fennel, chiles and garlic
